Today is my daughters 12th birthday. \u00a0 For her though I can’t just run out and buy a cake at the bakery as she is allergic to dairy, egg, peanut, tree-nut.\u00a0 So I always make her a nice cake, we have done everything from hello kitty to spongebob to just plain chocolate cupcakes.<\/p>\n
She wanted this cake for tonight after supper.<\/p>\n
Chocolate Zucchini Cake<\/p>\n
1\/4 fleischmann’s margarine (dairy-free)<\/p>\n
1\/2 cup oil<\/p>\n
1 1\/2 cup sugar<\/p>\n
2 tbsp water,1 tbsp oil,2 tsp baking powder (egg subt)<\/p>\n
1 tsp vanilla<\/p>\n
1\/2 soy milk (use other if allergic to soy)<\/p>\n
2 1\/2 cup flour<\/p>\n
1\/4 cup cocoa powder<\/p>\n
1\/2 tsp baking powder<\/p>\n
1 tsp baking soda<\/p>\n
1\/2 tsp cinnamon<\/p>\n
2 cups grated zucchini<\/p>\n
Cream together butter, oil, sugar, egg subst, and then add rest of ingredients.\u00a0 Mix well and add to a bundt pan or 9×13 pan.\u00a0 Bake at 350 for 45 min or when toothpick comes out dry.<\/p>\n
You can add icing or a dairy-free icecream to top off, but its good by itself too.<\/p>\n
